Big Plans for Fraser Short

Fraser Short has taken over The Brooklyn Hotel - soon to be coined The Morrison

This news item was featured in the August issue of Australian Bartender magazine.

Fraser Short has some exciting plans coming up with one of the CBD’s icon venues, The Brooklyn Hotel, set to undergo a revamp in the coming months. “The Brooklyn has been one of those bars in the heart of the city that you drive by and just dream about taking on, [it’s] forgotten and misguided,” said Short.

While plans aren’t concrete they’ll look to start renovating possibly within six months and Short says, “while we are not looking to heavily theme the place, we do believe the city is missing somewhere homely. An intimate and warm New York styled bistro with cracking booze on offer.”

The relaunch will come with a re-brand too, essential when changing the path of such an established venue and Short has the new moniker already pegged: The Morrison. “The building is heritage and has a real story of its own,” Short stated. “We want to allow that story to speak for it’s self while injecting a cool, mature, yet relaxed feel – a room that has some art and culture.”

With the venture in its early days, the food and drink offerings are still being fine tuned. “Once we start pulling the team together we will narrow down the options somewhat,” Short said. “Having the team’s creativity and input is always critical to breaking new ground,” so stay tuned for The Morrison.
