The Honourable Julia Gillard MP finally has a local small bar and restaurant in which to drown her polling woes. The Botanist Kirribilli has just opened its doors in the old Milsons restaurant site thanks to owners Ben Carroll and Hamish Watts – the duo behind Bondi Hardware.

Carroll and Watts have enlisted the help of their head chef Justin Walshe to serve up fare that will do justice to the fact that Milsons was a hatted restaurant for over 15 years. Carroll tells us that the venue will “take the customer’s back in time to the era of discovery and exploration, by incorporating fresh produce with herbs, spices, fruit and vegetables.

“‘The food menu constructed by Justin will be global share plates, taking advantage of the fresh produce and paying homage to the spice trade. The cocktail list will also reflect the theme with lots of flowers, infused spirits and interesting drinks.”

Carroll adds that the venue will continue Bondi Hardware’s mantra “look bar act restaurant”.
