Below York Street’s The Cuban Place (the place formerly known to some as La Bodeguita del Medio — it’s the same place, it’s just Australians can’t be arsed to pronounce it) comes this basement level cocktail den called Parke Davis.

The cocktails has been put together by Julian Serna, which is reason enough to get there for a drink. You could start with aperitif tasting flight featuring three tasters of vermouth, then get a little tropical with the Colada 18: Havana Club 3 infused with pineapple, fresh pineapple juice, lime, and topped with a Coco Lopez foam. And you’ll definitely want to finish on their tricked-up riff on the Sazerac, their Sazerac Sphere: Remy Martin cognac, muscavado spiced syrup and Peychaud’s bitters poured over an absinthe sphere.
