Long-time El Publico manager, Nick Harris, is on board as venue manager for the open of a new bar — just in time for the Perth summer.
The bar will be called The Blue Flamingo, and is set to revamp the outdoor space of Perth’s Leederville Hotel, which closed last year for renovations.
The new bar is inspired by “California, Cuba, the Caribbean and hints of South America,” Harris told Australian Bartender.
“The Blue Flamingo is built upon the notion of a tropical paradise, with a cocktail list that heavily features rum, tequila and pisco with wine and beer offerings predominantly from South America,” said Harris.
Expect upbeat jazz and tropical tunes, and food that draws on those South American and Caribbean influences when the bar opens in late September to early October.
