In Sydney’s hospitality scene, few operators can rival the sort of quick success that Ben Carroll and Hamish Watts have had with the venues under their Applejack Hospitality banner.

They began with Bondi Hardware, went north of the bridge for The Botanist and SoCal, before coming to Potts Point for The Butler. Last year, they opened their fifth venue, Della Hyde.

It’s inspired by the old world hotel lobby bars of days gone by and has a hint of Wes Anderson’s The Grand Budapest Hotel about it. But with drinks by group bar manager Lachlan Sturrock and venue manager Joe Worthington, there’s no old world stuffiness about the place. It’s fun, the drinks are spot on, and they’re trading until late every night.
