Following on from a successful collaboration with Nico de Soto of New York bar, Mace, the team at PS40 is getting set for another collab, this time with Luke Whearty, the bartender-owner of Singapore bar, Operation Dagger.
Whearty has built an international reputation for himself and his bar, which, we’re confident to say, looks unlike any other bar in the world. Whearty’s approach and drinks are innovative, earning Operation Dagger a spot at number 21 on the World’s 50 Best Bars list and taking out the title of Singapore’s most creative bar at the 2016 Singapore Bar Awards.
The operation Dagger pop-up is happening on Sunday 23 April at PS40, from 4pm to 10pm, and will feature a five-strong list of Operation Dagger cocktails: Cabbage Wine (fermented red cabbage, apple, rose vinegar), Bee Pollen (wild bee pollen, thyme, dark chocolate, lemon charcoal), Dirty Martini (green olive, juniper, hops, caramel, grape), Fallen Fruit (poached pear, vanilla, curry leaf), and Man vs. Pig (green strawberry, sorrel, lardo, verjuice).
