Bartender took some time out recently to have a chat with Adam Brewer (one of Brisbane’s most valuable commodities) to find out just a little more about the man who represented Australia in the recent 2010 World Class Finals.

Career:

How long have you been bartending and where have you worked previously?

Going on four years and I have worked at Byblos, The Press Club and Sling.

What is your proudest moment behind the bar?

Winning the national final for Diageo Reserve ‘World Class Bartender of the Year’.

And most embarrassing?

Breaking glass during my first attempt at Rematch Beeyatch and then breaking glass the second time I tried.

Favourites:

What’s been your favourite bar to work in?

Byblos, the variety on the back bar, the location and the bar team at the time were amazing to learn from.

What’s your favourite bar gadget?

A good bar spoon is always important – I was just given one by Ueno-san that is amazing. Also a good mixing glass – the one I’m using at the moment is a stemmed Japanese glass.

What’s your favourite movie?

The movie I am quoting allot of right now is The Fantastic Mr. Fox otherwise it’s a tie between Fear and Loathing in Las Vegas or Pulp Fiction.

What’s your favourite song?

‘Daft Punk is Playing at my House’ by LCD Sound system – it is genius in its simplicity.

Drink:

Describe your fantasy bar.

A small venue with attentive staff, quality drinks using quality products, simple food done well and tunes off my iPod.

What is your favourite product to work with at the moment and why?

Scotch whisky in general though being more specific the Talisker 10 year old. It has so many individual complexities to work with.

What products do you think will be hot over the coming year?

Defiantly Japanese whisky. I can see Genever making a comeback, but also unique bitters flavours and combinations. The Bitter Truth have some amazing products to work with.

What do you drink to…

I really enjoyed the service and atmosphere at Eau de Vie and the same applies to The Lark.

Quench your thirst?

Water…

Impress a lady?

Bobby Burns. It has a good story behind it and oozes an image of sophistication.

Unwind after a long shift?

Scotch on the rocks.

If you could have a drink with one person (alive or dead) who would it be and why?

Jimi Hendrix. The guy would have been amazing to party with and I think there would be some interesting stories to listen to.

Can you tell us some of your favourite bars to visit?

Can you juggle, perform any magic tricks or have any other unusual talents?

I have an alternative personality called the ‘Night Warrior’ who has an amazing ability to climb anything and everything.

What was the last book you bought?

The Culture Club by Craig Schuftan.

Who’s your hero?

The Night Warrior.

If you could be have a superhuman power what would it be?

Psychokinesis; the ability to control things with my mind.

    The answer should have read “Any bar that I might have the pleasure of working with Angus Burton in”.
