Canberra is hosting a small boom in new bars and restaurants lately, and the new Pelagic Bar & Dining is looking to focus on a seafood driven menu, a solid wine selection and most importantly classically driven cocktails. Head bartender Geoff Fewell is proud of the team and what they are bringing to Canberra’s drinking and dining scene. “We are attempting to let the product shine, whether in raw/neat form, or dressed, the base product should be tasted within the finished product, balancing with the other flavours.  We want to take drinking with food away from ‘just wine’.

Food can be matched with a plethora of libations.” Too true Geoff. The Pelagic’s cocktail list features an extensive classics collection, in house creations, a martini focused section as well as bespoke drinks – fresh juices are used where possible. Try the Truffeled Alexander; Spiced Sazerac or a White Sangria. The bar also features in house syrups and spirit infusions and has an extensive international listing of beers. The wine cellar offers over 200 labels and 14 selections by the glass, creating one of Canberra’s most extensive wine lists.
