Career:

How long have you been bartending?

“I think it’s about three years, I remember bussing in a nightclub when I turned 18 and it took for what felt like forever to finally get behind the bar.”

Where have you worked previously?

“My favourites include Loop in Melbourne, Ely in Dublin and now Ezra Pound in Perth.”

What is your proudest moment behind the bar?

“I guess I’m proud to have a job that I love, lets me meet people and have some good craic.”

And most embarrassing?

“I remember slipping over behind a very busy bar with a rack of glasses once, breaking every single one of them and getting a lovely bar mat print on my shirt. The entire bar erupted into a fit of laughter; no amount of nervous grinning can bring you back from that.”

Favourites:

What’s been your favourite bar to work in?

“I’m not just saying it to keep my job, but it would have to be Ezra Pound, we have such an amazing family down there.”

What’s your favourite bar gadget?

“My trusty old barblade! I feel like a mini ninja with it.”

What’s your favourite city to visit?

“Lisboa, Portugal. Amazing people and radical food.”

What’s your favourite movie?

“Casablanca. I can only dream of being half as dapper as Bogey.”

What’s your favourite song?

Late of the Pier – The Bears Are Coming. I can’t help but rock out when I hear that track.”

What’s your favourite sport?

“I like dancing on stunt wood, aka skateboarding.”

What’s your favourite cocktail?


At the moment, I’m all about the Smokey Martini. James Dean was right on the money with this one.

  • 45ml Vodka
  • 15ml Islay single malt Scotch

*Add ingredients to a mixing glass and stir. Serve in a chilled martini glass and garnish with a lemon twist.

Describe your fantasy bar.

“An exact replica of the bar from Casablanca, down to a piano player: ‘The Gin Joint’ perhaps?”

What is your favourite product to work with at the moment and why?

“Goslings Black Seal. Its dark solid taste is everything I imagine rum to be and It makes me feel all piratey.”

What products do you think will be hot over the coming year?

“Ciders seem to be getting a touch creative, and now with winery’s getting on board, I think it’s going to be a great year for the fruit.”

What do you drink to impress a lady?

“Blood and Sands. It sounds manly, comes in a cocktail glass and is tasty. The hat-trick of lady impresses.”

Unwind after a long shift?

“Mountain Goat, Steam Ale.”

If you could have a drink with one person (alive or dead) who would it be and why?

“Jack Kerouac, I’d love to hear about his experiences over a bottle of whiskey.”

Can you tell us some of your favourite bars to visit?

The Bird and Five Bar, both in Perth”

Other Stuff:

Can you juggle, perform any magic tricks or have any other unusual talents?

“I can tie a knot in a cherry stem with my tongue and I still have no idea why went to the trouble of learning that.”

What was the last book you bought?

“The Killer inside Me. Creepily astounding.”

Who’s your hero?

“Mr Spike Jonze, a talented director, photographer and skateboarder.”

If you could have a superhuman power what would it be?

“Speed up and slow down time. It would be rad to watch things in slow motion.”

If you were to be something other than a bartender, what would it be and why?

“A Captain, so I could sail the seas and grow a great beard. And pretend to be a pirate.”
