Cocktail Experiment – Vodka

Bartender headed down to Cohibar on a stellar afternoon with a line-up of good vodkas was something to envy, and the team of bartenders – Sam Bygrave, Ollie Light, Mike Sales, Daniel Noble and Mike Lowe – were keen as mustard to have a bit of hair of the dog. Check out the sensational cocktails that they whipped up – well done lads, a great job all round!

Jamie Chesher takes out Appleton Estate Bartender Challenge!

A big congratulations to Jamie Chesher (EDV, Melbourne) for taking out the recent Appleton Estate Bartender Challenge national final. Having secured the top spot, Jamie will now fly to Jamaica for the Global Final where he will represent Australia – and hopefully do us proud!

PaperPlanes

This is the latest Sydney offering from the Barge brothers assault: Matt, Chris and Tim. For the new Bondi venture they’ve been joined by Phil Capaldi, who brings a wealth of experience and a new perspective to the Barge8 Hospitality Group. PaperPlanes is Japanese contemporary, Tokyo Pop style and even if you can’t peg that exact theme in your head you’ll know something special is happening when you arrive. There’s skateboards on the roof giving a textural and visual experience, as well as what seems like hundreds of paper cranes hanging from the ceiling.

Collection Bar crew launch bespoke cocktailing syrups

In exciting news Paul Fitzsimmons and Owen Westman (l-r above) owners of the Collection Bar (Melbourne) have booked a stand at this year’s Sydney Bar Week so that they can show off their recently launched handmade syrups to thousands of avid drinks consumers and hordes of bartending professionals.

Public Bar & Restaurant

Public has launched in Brisbane and has some top operators behind it in Tom Sanceau and Bonnie Shearston (co owners of award winning Canvas Bar). “We have opened Public in Brisbane’s North Quarter which is a largely corporate area with not many residents,” said an excited Shearston when Bartender spoke to her recently.

Without question, one of the best perks of my job is the travelling to distilleries and bars around the world and interstate to catch up with industry friends and check out the local bar culture. One such a trip to Brisbane recently blew me away as the standard of bartenders and bars are exploding in this great town. You could point the finger to a few great bars like The Bowery, The Lark and more recently Canvas (pictured above) that have set the standard in bar culture and been heavily responsible for training and educating many of the best home grown bartenders.

In this issue of Bartender we have the two great Gaelic spirits going head to head. A line will be drawn in the sand – on one side the ‘Mcs’ and on the other the ‘Macs’. Long has there been divisive debate on whether whisk(e)y should be served with or without an ‘e’ and to whom the invention uisge beatha rightly belongs.
