Melbourne bartender Shaun Byrne has been getting a taste for vermouth – and so he ought to, given he’s spent a good five years at Melbourne’s venerable ginstitution, Gin Palace. Here he has teamed up with French winemaker Gilles Lapalus to bring bars their very own Australian vermouths. Their Maidenii Aperitif is a red wine-based  vermouth drawing on orange zest, gentian and bay leaves among a host of other botanicals. Their sweet vermouth also uses red grapes – this time Cabernet – and is aimed at Negroni style drinks. They’ve notched up some notable reviews, said Byrne.

“We are really happy with how things are trucking along,” he said.
