Drinks: Unravelling the Mysteries of Flavour and Aroma in Drink by Tony Conigliaro

Once in a while a book comes along that’s a real game changer and Drinks by Tony Conigliaro is one of them. If you’re a doubter then turn to the first page where Heston Blumenthal sings Conigliaro’s praises: “Tony Conigliaro is a revolutionary. He is at the forefront of a new energy in cocktail making.”

Conigliaro is behind the award winning 69 Colebrooke Row in Islington, London and is co-founder of the Drink Factory collective of bartenders and artists. If you’re expecting the drinks to be tricked-up and laden with theatricality you might be sadly disappointed – there’s a purity and deceptive simplicity to ‘Tony C’s’ drinks. Drinks aside there’s extensive prose on equipment and advanced techniques – to produce many recipes in this book you might need to invest in some serious gear like a homogeniser, a dehydrator and a rotavap.
