Is sherry about to have its moment in the sun? New Sydney bar, Fino Par, thinks so and is doing what it can to shine a light on this wine from Jerez, Spain.
The bar has opened on the corner of Elizabeth and Goulburn streets on the edge of the Sydney CBD, and is trading from breakfast right through to late night tapas. And throughout the day you’ll be able to grab a taste of Spain in your glass, thanks to the large selection of Spanish red and white wines, and of course, sherry.
Leading the bar team is Brett Harris (ex-Cafe Pacifico, Hello Sailor), and along with Dean Sykes (ex-Eau de Vie, Hinky Dinks) put together a sherry-centric list of cocktails. 10 drinks on the 15-strong cocktail list feature sherry, from nearly forgotten classics such as the Adonis (fino sherry, sweet and dry vermouths, bitters) and Bamboo (dry vermouth, sherry, orange and Angostura bitters), to Syke’s twist on the modern classic the London Calling which indulges a love for agave spirits, the Oaxacan Calling (joven mezcal, fino sherry, lemon juice, teapot bitters).
They’ve got 11 sherries on their list, ticking off all the bases of manzanilla, amontillado, oloroso, palo cortado and PX, and 10 of both Spanish whites and reds, as well as a clutch of cava, Spain’s sparkling wine.
