Della Hyde is the fifth venue from the Applejack Hospitality group, the team behind Bondi Hardware, The Botanist, SoCal, and The Butler.
Located at the city end of Sydney’s Oxford Street and in the basement of the building that once housed Q Bar, owners Hamish Watts and Ben Carroll wanted Della Hyde to mine some of that old time, hotel lobby bar feel for this next venue.
“We like the idea that the Della Hyde site was ‘apparently’ once a grand hotel situated on Hyde Park and named after the famous American actress Della Pringle,” said Watts.
The bar is now open, with Joe Worthington (ex-SoCal) on board as general manager, and with group bars manager Lachlan Sturrock leading the drinks design.
