Watch Max Greco mix up his take on the Tommy’s Margarita


The Tommy’s Margarita was created by Julio Bermejo in 1987, at Tommy’s Restaurant in San Francisco. Since then the drink has spread around the world far from its San Francisco home thanks to travelling bartenders, and a simple, delicious formulation that’s easy to replicate.

The canonical Tommy’s Margarita recipe — blanco tequila, fresh lime juice, and quality agave syrup (such as the MONIN Agave Syrup used here) — is a simple drink that offers so much more than its individual components.

And its simple structure is ripe for riffing on. Max Greco, of award-winning Sydney bar, Vasco, offers up his take on the Tommy’s Margarita in this video here. Greco’s twist? He adds a little hit of chilli heat, by way of a jalapeño pepper, and a dose of freshly squeezed pineapple juice. Watch the video above and get the recipe for his twist below.

Max Greco’s Tommy’s Margarita twist

  • 60ml Cuervo Tradicional Silver Tequila
  • 30ml fresh lime juice
  • 1/2 jalapeno pepper
  • 20ml MONIN Agave Syrup
  • 20ml fresh pineapple juice
  • Shake all ingredients with ice and double strain over big block ice in a rocks glass.
