If champagne is your thing, then new Sydney bar Solera is what you need. The new Sydney bar from owners Scott Bayly, Ty Van Emden and Roman Kristek focuses on cocktails and champagnes and joins the nascent bar scene down at Sydney’s new Barangaroo development.

They’ve enlisted the highly regarded Marian Beke of The Gibson in London to create the cocktails, and he’s put together a rather smart drinks list.

The Corbonado, for instance, is a take on the Margarita, using mezcal instead of tequila and with notes of mango chutney to keep things interesting; their Snuff Daiquiri has a distinctly smoky taste to it, as the drink is fine-strained through a cigar tobacoo leaf.

And if it’s champagne you’re after, each of the tables in the lounge area come equipped with dedicated chillers for your bottle of pops.
