As March rolls around we always think about St Patrick’s Day and all the celebrations in cities across the world (well, in a pre-COVID world anyway). It gives us an excuse to showcase all the great Irish whiskey brands that are lining the shelves of our country’s bars.
This month, the team from Roe & Co teamed up with the folks from The Wild Rover in Sydney to showcase three of their signature Irish whiskey cocktails. Incidentally, they have one of the best Irish whiskey selections going around, so pop your head in for a tipple, next time you’re in town.

The Pear Tree
45ml Roe & Co Blended Irish Whisky
20ml white wine poached pear syrup
90ml ginger ale
Squeeze fresh lime
Build in a highball glass, add ice and
serve in the copper pear glassware.
Top with ginger ale and garnish with a mint leaf.

Wagon Wheel Old Fashioned
60ml toasted coconut Roe & Co Blended Irish Whiskey
10ml raspberry syrup
4 drops of Fee Brothers chocolate bitters
Add all to mixing glass, 3/4 fill with ice.
Stir and strain over chipped ice.
Garnish with toasted coconut flakes. Blaze.

Cold Irish Coffee
30ml Roe & Co Blended Irish Whiskey
60ml cold brew coffee
15ml Guinness syrup
15ml vanilla cream float
Build in Irish coffee glass.
Top with vanilla cream and grated nutmeg.
