How to make The Wild Rover’s ‘Dancing with Rosie’

Luke De Bono from The Wild Rover shows us how to mix up this tequila and Aperol twist

The Wild Rover in Sydney’s Surry Hills is known for being a belter of a whiskey bar. From the Liquid & Larder Group (The Gidley, Bistecca, Grandma’s) this is a neighbourhood bar where ‘Irish folk meets New York Chic – stripped back, laid bare with splashes of extravagance set against a rustic backdrop.’

While whiskey is definitely their specialty (make sure you head upstairs and check out the impressive menu up on the wall) they also smash out cocktails that feature other spirits, so don’t be deterred if whiskey is not your number one tipple. Here we are featuring a thirst quenching hi-ball starring blanco tequila and Aperol. Enjoy!

Dancing with Rosie
30ml Don Julio Blanco Tequila
30ml Aperol
20ml Rosemary syrup
20ml fresh lemon juice
60ml Pink Grapefruit soda
Step 1: Add tequila to mixing glass
Step 2: Add Aperol
Step 3: Add rosemary syrup
Step 4: Add lemon juice
Step 5: Add ice
Step 6: Top with soda
Step 7: Garnish with grapefruit slice and rosemary salt.
