Never Never to bring the South Australian flavour to Sydney Bar Week

A very special Bar Week version of Take Over Tuesday is on the cards at PS40 this September.

Australia’s most highly-awarded gin producer, Never Never Distilling Co. are bringing the very best flavour jedis to Sydney Bar Week with a full bar takeover at PS40 on Tuesday, September 6th.

SA GOOD HEY! is the opportunity to sample some of the very best cocktails from award winning bars and bartenders from the great state of South Australia.

“We wanted to share some of the incredible drinks that are flying over the bar in our home state,” says Never Never Distilling Co. Brand Director Sean Baxter. “It’s a fantastic opportunity to get in, try some outrageous food and pop off a few tasty cocktails at the same time,” Baxter says.

Sydney Bar Week is the perfect opportunity to show the country the incredible talent that is on show from Adelaide, which is quickly becoming a destination when it comes to food and drinks,” says Sean.

The bartenders who are being flown in created some of the very best cocktails in the Step Into the Never Never cocktail competition, which was all about uncovering deliciousness through simple ingredients.

“Fair to say the talent we have aligned is of the highest level,” says Sean. “From the drink mecca of Maybe Mae, to the noisy new kids at Memphis Slims to the award winning bar at Arkhe, the cocktails from these SA hotspots are sensational,” he says.

Nick Corletto of Maybe Mae will be bringing his Only Fans Martini that uses Never Never Ginache, fresh passionfruit and vanilla lacto juice, served with a sidecar of Maybe Mae passion fruit wine.

Vanessa Rech, winner of South Australia’s Step into the Never Never 2022 will be bringing her Arkhe Smoked Rhubarb Negroni, a combination of Ginache, Mezcal, Sfumato Rhubarbo, Rhubi mistelle and sweet vermouth.

Grace Rawlins from Memphis Slim (and winner of Step into the Never Never 2021) brings an exquisite martini riff using Triple Juniper Gin, Dark Series PS40 Aquavit, sesame oil infused dry vermouth and fresh dill.

 

All drinks will be available throughout the evening until gone (they are limited) with several PS40 and Never Never house specials also being poured out.

“We’re even bringing a few of the gun bartenders from our own cocktail venue in McLaren Vale to show that distillery doors can do more than neat samplings and production floor tours,” says Sean.

On the pots and pans will be Jamie Fleming from Alba Bar and Deli, nominated for best bar food in the country. Jamie rose to fame on Masterchef Australia, on the very same season that Sean appeared on. While Sean chose spirit production in South Australian, Jamie now plies his trade in Brisbane after relocating from South Australia via New South Wales.

“Jamie from Masterchef, I couldn’t miss the opportunity to work with that guy again,” says Sean. “His restaurant is one of the best in Queensland and he brings a flavour arsenal that is hard to beat,” says Sean.

“Even though technically he calls himself a Queenslander these days, we’re still excited to see the kind of delicious he’s able to bring to the table,” says Sean.

The kind of delicious that Jamie brings is phenomenal, with his venue creating dishes that sit somewhere between basque country classics and east village pintxos. He’s constantly changing the game in the Brisbane food scene and his influence is quickly beginning to make its mark with his inaugural listing on the Top 100 Most Influential List from Bartender Magazine.

“We’re bringing some of the classics like the Baked Jamon XO Scallops and PX Lamb ribs,” says Jamie. “We’re also doing a Jamon Fat Flan which won’t be on the menu, it will be a little special add on for guests,” he says.

There will be dinner seatings throughout the evening from 6pm with supper and drinks seatings from 9.30pm. Due to it being one of the busiest weeks for bars around Sydney, it’s highly essential that you book to reserve your seat.

Tickets start from $65 and will include a drink on arrival. Tickets for the supper seatings will be $50 and will be on a first come first serve basis and will include a welcome cocktail and snacks.
