Hickson House Distilling Co launches world’s first Tepache Barrel-Aged Gin

The Rocks-based craft distillery puts a creative Australian spin on a traditional Mexican drink

Just in time for the 2022 Sydney Bar Week, Hickson House Distilling Co is launching its first limited, single-barrel release: Hickson Rd. Tepache Barrel-Aged Gin.

Tepache is a traditional Mexican drink made from fermented pineapples and various spices.  Due to its distinctive flavour and versatility, it is becoming a popular cocktail ingredient and a new favourite for bartenders across the globe.

In a world’s first, the craft distillery based in The Rocks (Sydney) has rested their classic Hickson Rd. London Dry Gin for three months in a tepache wheat beer barrel, seasoned with pineapple, cinnamon, ginger and allspice.  Being a single barrel, this product is extremely limited in availability, with only 418 bottles produced.

The time in the barrel allowed the gin to pick up an attractive golden hue and develop mellow oak notes, while the dominant juniper flavour softened. The resulting Tepache gin has a distinctive pineapple and baked banana flavour with subtle notes of cooking spices.

Hickson House Head Distiller, Tim Stones says “I knew when we tasted the first drop, that we had something special. Our classic London Dry Gin is a very aromatic gin that provides the ideal base for marrying the complex botanical recipe of the gin with the character of the oak barrel and the tropical flavours of the tepache”.

The versatility of Hickson Rd Tepache Gin’s makes it a fantastic addition to your cocktail range. It is a delicious sipping gin that is best enjoyed neat, or with dry or lemon flavoured tonic for a unique G&T experience. It is also ideal to spice-up classic cocktails like a twist on a Tommy’s Margarita or a Gin Sour.

Hickson House co-founder and Australian gin authority, Mikey Enright adds “We are incredibly proud of our first limited release, as we are pushing the boundaries of making traditional gin with a modern Australian twist.  Our only regret is that we could only make 418 bottles from the one barrel that we had.”

Craft spirits enthusiasts are invited to have a sneaky taste preview at Sydney Bar Week’s Indie Spirits Tasting on 4 September, before serving our Tepache gin for the first time at The Bartender Magazine Top 100 Most Influential party at Hickson House Distilling Co on 5th September 2022.

The hand-crafted, 45% ABV Hickson Rd Tepache Barrel-Aged Gin will be available as of 7 September 2022 to purchase online from the Hickson House website, as well as directly from the Distillery cellar door for $75 per 500ml bottle. Tepache is a traditional Mexican drink fermented from pineapples and seasoned with various spices.  We have rested our classic Hickson Rd London Dry Gin in a tepache wheat beer barrel, resulting in in a sweet, softly spiced gin that is ideal for sipping or with dry or lemon flavoured tonic for a unique G&T experience.

This is Hickson House Distilling Co’s first limited single-barrel release with only 418 bottles produced. Barrel-Aged for three months in a tepache-inspired wheat beer oak barrel seasoned with pineapple, cinnamon, ginger and allspice.

Tepache Gin & Tonic
30ml Hickson Rd. Tepache Barrel-Aged Gin
90ml Dry Tonic Water
Method: Pour over cubed ice in a Highball glass
Garnish: Teaspoon Barbeque or flamed pineapple chunks, 4-6  Juniper berries

Tepache Gin Tonica
50ml Hickson Rd. Tepache Barrel-Aged Gin
150ml Lemon Flavoured Tonic Water
Method: Pour over cubed ice in a Bordeaux style wine glass
Garnish: De-hydrated pineapple, cinnamon quil

Tepache Gin Sour
60ml Hickson Rd. Tepache Barrel-Aged Gin
40ml Lemon Juice
10ml Crawley’s Agave
10ml Egg White
Method: Pour all ingredients into a shaker w cubed ice, shake and strain into a Cocktail glass
Garnish: Old Man Salt Bush Sprig
