Jayda: Melbourne’s newest cocktail bar, serving everything with opulence

Acclaimed chef and restaurateur Shane Delia’s latest hospitality venture, Jayda, an opulent cocktail bar opening this November. Named after Shane’s daughter, the space is located at 19 Bond Street, right next door to Delia’s esteemed restaurant Maha, and plans to breathe new life into the secluded street.

Cocktails are the first point of call at Jayda, and Delia has enlisted master mixologist, Orlando Marzo, Founder of Drinks by Loro and previously World Class Bartender of the Year.

Entering off the laneway, guests visiting Jayda pass through a discreet doorway on the ground floor of the art-deco ‘Alkira House’. French wash painted walls, polished mirror surfaces, sumptuous seating and sultry lighting create an inviting ambience that’s hard to leave.

 

 

 

 

 

 

 

 

 

 

Cocktails are the first point of call at Jayda, and Delia has enlisted master mixologist, Orlando Marzo (Founder of Drinks by Loro and previously World Class Bartender of the Year), to create a bespoke list of eight unique and memorable cocktails exclusive to the bar. Drinks not to be surpassed include Delia’s personal favourite, the Strawberry Cream Negroni, crafted using rosehip, blackberry leaves and dehydrated yogurt, to deliver a decadent, unforgettable aperitif with lingering pleasantness.

The food menu has been crafted by Head Chef Daniel Giraldo (Maha, Maha East & Maha Bar), alongside Shane and is split into five sections of light Middle Eastern influenced dishes, titled ‘Raw’, ‘Snacks’, ‘More’, ‘Sweet’ and ‘Cheese’ – all designed to be mixed and matched to suit the time of day and appetite of guests.

The same care has been applied to the curation of the wine list. Delia scoured the Maha cellars for the best of the best wines for the Jayda offering, which features new and old-world wines like the Ngeringa Pinot Noir 2021, Wine Farm Chardonnay 2019 and Dom Perignon 2012. Displayed across the back of the bar, a thoughtful list of Australian and international spirits are available.
