Busby’s, an everyday natural wine and record bar by hospitality group, PUBLIC, opened late last year at the street level of Paddington’s Oxford House. A wine and cocktail bar first and foremost, the large, ever-evolving list of wine by the glass has been curated by Mike Bennie of P&V Merchants, and features fun and approachable drinks from Australian, French and Italian producers. Highlights include Le Juice Gamay Beaujolais, FR, and Chateau Acid Chardonnay Central Highlands, NSW.

The cocktail list, created by Maybe Sammy expert Paolo Maffietti, is short and punchy with a special nod to grape-based liquor. Taking a minimalist approach, the cocktail list consists of five signature cocktails with a focus on flavours and origins of ingredients. Cocktail highlights include Abbey Road (Citrus Gin, Vermouth Bianco, Davidson Plum, Champagne) and Megatone (Grappa, Tequila, Ginger wine, Pastis) as a nod to the venue’s HiFi inspiration.
