A Japanese-inspired bar and diner has opened in Coburg

A new Japanese-inspired bar and diner has opened in Coburg, bringing a high-energy atmosphere, creative cocktails and flavour-driven dining to Melbourne’s north.

Koi Toy officially opened, positioning itself as a casual yet elevated destination for everything from weeknight dinners and celebrations to pre- and post-movie drinks.

The 90-seat venue places a strong emphasis on its beverage offering, with bartenders Danny Chen and Whale Kim (Golden Monkey) behind a cocktail list designed to complement the menu’s bold flavours. Signature serves include the Swipe In TanTan, blending Pavan Liqueur, Bombay Sapphire Gin, passionfruit and peach bitters; The French Rising Sun, combining Chambord, Belvedere Citrus Vodka Lemon, and pineapple; and Day & Night, a mix of Bacardi Carta Blanca, St-Germain Elderflower Liqueur and Pomme Verte.

Cocktails sit at the centre of the experience, paired with music and a lively atmosphere that encourages guests to settle in for the evening.

Designed by Studio Y with branding by Confetti Studio, Koi Toy draws inspiration from traditional Japanese craftsmanship while incorporating contemporary elements. Timber finishes reference the yakisugi wood-charring technique, while layered neon signage nods to the streets of Tokyo. Sphere lighting and lantern-inspired ceiling features complete the venue’s energetic aesthetic.

In the kitchen, Executive Chef Alex Meimetis has developed a menu of share-style dishes that move beyond traditional Japanese staples.

Koi Toy is open seven days a week for lunch and dinner service.
