A new $2 million-plus hospitality precinct is set to open in Sydney this October, with Bungalow Collective launching House of Bungalow at 65–67 Foveaux Street, Surry Hills. Spanning three venues under one heritage roof, the day-to-night destination brings together a café, restaurant and late-night cocktail bar, designed to take guests from morning coffee through to dinner, drinks and live entertainment.
For Bungalow Collective Founder and Director Binura Jayasuriya, House of Bungalow has been years in the making.
“House of Bungalow was always the plan,” said Jayasuriya. “I’ve spent years collecting ideas, learning from different industries and travelling the world. This is where all of those experiences come together.”
While the ground floor café has been operating since May, the full precinct is set to launch in early October, with drinks playing a major role across both the restaurant and basement cocktail lounge.
The restaurant’s beverage program has been designed around the menu, with a pairing-led wine list that draws heavily on Spain while extending into France, Italy, Australia and New Zealand. Alongside accessible by-the-glass options.
Downstairs, The Basement shifts the focus entirely to cocktails and nightlife. Open Wednesday to Sunday, the venue will feature a bespoke cocktail list, and a five-night entertainment program, positioning itself as a late-night destination in Surry Hills.
Leading the venue is Nightlife & Entertainment Manager Julieana “Julz” Togiaono, whose experience includes roles with The Star and other major entertainment operators.
“The Basement will bring back the energy of Sydney’s nightlife that people once knew and loved, and become the late-night destination in Sydney,” said Togiaono.
“Service touchpoints like the VIP bottle service bring that international level of entertainment and hospitality in a way Sydney has never seen before. Every guest will feel like a VIP.”
The restaurant itself is led by award-winning chef Gianni Moretto, whose menu reflects a career spanning Chile, Spain, Australia and extensive travel through Asia and South America. The produce-driven menu combines modern Spanish cooking with Asian and Latin American influences, with dishes including Smoked Eel Gilda, Peking Duck Canelons and Mochi de Turrón.
“Coming from Chile with Italian heritage, then living in Spain and Australia while travelling through Mexico, Peru, Malaysia, Indonesia and Japan, every place has influenced the way I cook,” said Moretto.
House of Bungalow occupies the former Schweppes Building on Foveaux Street, with interiors designed by M Studios. Heritage features including the original brickwork, sandstone and timber detailing have been retained, while layered lighting, textured finishes and contemporary materials create distinct identities across each venue.
“We worked with the incredible M Studios to bring our vision to life,” said Jayasuriya.
“Their brief was to create a design-led hospitality precinct that balances the building’s heritage character with contemporary interiors, using lighting, materials and atmosphere to create distinct moods across each space while maintaining one cohesive identity. They absolutely delivered on that vision.”
House of Bungalow officially opens in October, adding another all-day hospitality destination to Surry Hills that blends coffee, dining, cocktails and late-night entertainment under one roof.
