The countdown to Sydney Bar Week 2026 continues, and next up Adelaide is heading to Surry Hills for a late-night interstate crossover between two very different bars.
On Monday, 14 September, Linla’s Night Market – A trap. Takeover will see Lachlan Gunner and the trap team take over Linla from 10pm until late, combining Adelaide cocktail technique with the flavours of Linla’s Taiwanese pantry.
Imagine walking into Linla on a Monday night and finding the room in a state you’ve never seen it in.
At the bar, Lachlan Gunner and the trap team take over. Trap was named South Australia’s Best Cocktail Bar in 2024, built in a basement most of Adelaide doesn’t know exists, on the idea that competition-level drinks shouldn’t feel like hard work. Lachie has fourteen years behind the stick and a national competition record to match.
For this shift, he’s working from Linlas Taiwanese pantry and running it through trap.’s technique.
This is more than a guest shift. It’s an interstate crossover between two rooms that have almost nothing in common.
Around him, the dining room clears.
Linla is normally a Taiwanese social dining bar: communal tables, big groups, a room that runs late and loud.
For one night the tables come out, and the whole space turns over to the bar.
Standing, moving, everyone in one room instead of parked at their own table.
The vision is simple: Adelaide precision, Taiwanese flavour, a Surry Hills room with the furniture pushed aside.
Monday is the industry’s night off, and Linla is where that crowd already ends up.
Together, trap. and Linla will put on the kind of night Sydney Bar Week is actually for: bartenders, brands and hospo mates in one room, drinking well past the point most rooms have called it.
