There are a number of different recipes out there for the Presidente, but one thing most people will agree on is that this drink hails from Cuba. We didn’t settle on a good spec for this drink until Max Greco of Sydney bar Vasco Bar made it for us in 2015; give his a go, it’s a great use of dry vermouth in a tropical drink. He also used an aged rum, which rounds out the sharp edges of the vermouth.

- 45 ml dark rum
- 15 ml dry vermouth
- 10 ml Cointreau
- Stir all ingredients with ice, then strain into a chilled coupette.
- Garnish with an orange zest.
