Operator Profile: Shaun Pattinson

Shaun Pattinson’s bar, Cushdy, has just celebrated 5 years of service and in that time has become the go-to bar in the burgeoning Adelaide cocktail scene. They’ve won awards – too many to mention – so we thought it high-time that we picked Pattinson’s brain about what makes Cushdy so great.

The Collins, Adelaide: First Look

With new bar legislation looking like it will come into effect in March, Adelaide looks set to become the next Australian cocktail destination. Looking to lead that charge is The Collins, the new bar opening soon at the Hilton, smack bang in the middle of the city. We got a look at the bar last week and were impressed with what we saw — the decor is sharp and the back bar is taking shape.

Gilt Lounge

Gilt Lounge is tucked away above Gowings Bar & Dining in the quirky QT Hotel, Sydney. It is luxurious, it is exclusive, but don’t take that as bywords for a lazy bar program – this place has invested seriously in doing drinks and drinks service well.

Brasserie Ananas

Open in time for the rush of festive season champagne sales is this new brasserie and bar in the Rocks. The bar is decked out in 1920s décor and inspired by the French Mediterranean and the eponymous pineapple (ananas being the French word for it).

Bar Profile: Palmer & Co.

“We created a venue that we’re passionate about and that we love,” Hemmes stated, “we just hope to hell it works out!”

Der Raum Summer Menu Edition 2010

We’re always excited to see what the guys at Der Raum are up to with their drinks. The guys are particularly excited about the new technique applied in the Velvet Fog, and promise they will be looking at further ways to develop this through the year with some more interesting stuff coming out for autumn & winter.
