Perryn Collier working on two new Brisbane bars

It looks as though there is a bonafide boom taking place in Brisbane bars in recent months. Not only has Kal Moore left Laneway to go on to a bigger role, so too has his one-time drinks partner, Perryn Collier. He is now with the Limes Group, taking on the role of creative bar director for the group.

His first task for the group has been overseeing the bar at Alfred & Constance’s basement, Air Raid Shelter. “The team is made up of myself, Andy Toop [ex-bar manager at Lychee Lounge] and Britt Monaghan [ex-manager Super Whatnot],” said Collier.

“The Air Raid Shelter is designed to be a great all round bar with a focus on quality drinks and food,” he said. “Unique and interesting cocktails, craft beers, wine and quality spirits will be on offer.”

He is also working on opening Alfredo’s Pizza, a restaurant bar located in a warehouse space next door to Alfred & Constance.

“The idea behind Alfredo’s Pizza is to give people a late-night option that’s not just quick, fast-food,” said Collier. “We will be providing people pizzas made from quality produce, hand cut pasta and wood-fired meats. We’re seeing a shift to late-night dining or last-minute meals and at the moment, the options around Brisbane are pretty limited.”

The Air Raid Shelter is open now and Alfredo’s is due to open after Easter.
