New Sydney bar, Bar Ombré, is the latest in a string of new venues to open in the north of the Sydney CBD. The Circular Quay rooftop bar is the first bar from the team that brought you Salt Meats Cheese, the restaurant and Italian eats purveyor group.
The new bar is named for the term that describes “the gradual blending of one colour hue to another,” they say, paying homage to their rooftop setting.
In terms of drinks, think Italian wines, Spritzes, and cocktails along the lines of a barrel-aged vanilla and grapefruit Negroni.
Food too will — given the bar’s pedigree — be a focus, with an Ombré Antipasto on offer (with burrata, salumi — you get the drill) as well as a host of cured meats and anchovies.
Bar Ombré is open Monday through to Saturday, from 11.30am until late, at Level 3, Gateway, 1 Macquarie Place, Circular Quay.
