House Made Hospitality unveils new buttery cocktail menu

For its winter menu, House Made Hospitality has collaborated with Australia’s cult butter brand, Pepe Saya, and created four butter-washed cocktails.

Through June, July, and August, these limited-edition cocktails will be on the menu at Lana, Grana, Apollonia, and Baptist Street Rec. Club.

The cocktails are the brainchild of bartenders, Abel Talos and Remy Krassoi, who spent a long day at Pepe Saya HQ learning about butter the way only cocktail aficionados can, by tasting, experimenting and learning.

The Pear Crumble leads the pack with a salted twist on the old fashioned, blending browned-butter Scotch with pear eau de vie and walnut bitters.

It’s the kind of drink that tastes like dessert with a secret pour of whiskey.

Then there is Toast & Butter – a breakfast-for-dinner sort of cocktail where gin, croissant syrup, and buttermilk come together as one. It’s clarified, smooth, and warm.

Of course, no winter lineup would be complete without something steamy. Hot Butterbeer Rum combines spiced butter batter, golden syrup and aged rum, pouring like something brewed in a wizarding world café.

Finally, the Honey Butter Bee hums with a light, tall and herby flavour, standing between an amaro fizz and spiced gingerbread. It has butter-washed gin and burnt honeycomb syrup to add complexity and sweetness.
