Ghanem Group has reopend the heritage-listed Hotel Boonah following a restoration, and has launched a new craft brewery, Boonah Brewing Co, and beer garden which is now open to the public.
For Ghanem Group Director – Adonis Ghanem, the revival is as much about community as it is about craft beer. “To restore a property that’s so important to locals, and add something truly new with Boonah Brewing Co, is something we’re incredibly passionate about,” said Ghanem.
Boonah Brewing Co launches with a full-flavoured mid-strength ale and a house-brewed ginger beer on tap. Four core brews will follow, including an XPA made with Australian Galaxy hops and a hard lemonade.
Natural spring water from the family’s nearby farm is used in the brews, and spent grain is fed to the farm’s cattle, creating an eco-friendly farm-to-glass system.
Executive Chef Jake Nicolson brings pub classics with regionally inspired dishes to the new menu, like the slow-cooked lamb shank pot pie and tandoori duck curry. “We’ve put a creative spin on traditional fare while keeping it honest and hearty,” said Nicolson.
