
Sydney’s bar scene is about to level up, with London hospitality power duo Zoe and Layo Paskin launching four new venues inside the upcoming 25hours Hotel The Olympia – each with its own style and flavour.
At the heart of the offering is The Mulwray – an intimate wine and cocktail bar dripping with noir glamour. Patrons can expect a tight list of classic cocktails alongside cult-favourite wines, served in a dimly-lit space built for conversation and slow sipping.
Above it all is Monica, the rooftop bar will be bringing a Santa Monica inspired feel to Paddington. With laid-back drinks, panoramic city views and a nostalgic West Hollywood energy, Monica is set to become a go-to for afternoon spritzes, top-shelf tequila and sunset meets.
Downstairs, The Palomar is a lively restaurant anchored by fire-fuelled cooking and a bold Mediterranean drinks list. Seasonal ingredients, wood-grilled meats and big-flavour wines will define this energetic space.
Keeping things bright during the day, Jacob The Angel on the ground floor will serve specialty coffee, house-made pastries, and breakfast cocktails. With natural wine on the shelves and Baker Bleu bread ready to be served, this is set to be a local staple.
“It really feels like a home away from home,” said co-founder Layo Paskin. “Sydney has so many brilliant bars, restaurants, and coffee shops – we’re excited to now be a part of that. We feel incredibly lucky to bring our brands into such an iconic building, and to be working with such a great team of people.”
Leading the charge in the kitchen is Mitch Orr, appointed Culinary Director across all four venues, and known for his innovation and fire-driven techniques.
“These venues will be vibrant, creative spaces, and that same energy will carry through to the culture we’re building in the kitchen,” Said Orr.
The Olympia marks the debut of the 25hours brand in Australia, with the group behind it – Christoph Hoffmann, Kai Hollmann, Ardi Goldman and Stephan Gerhard – joining forces with Studio Paskin to deliver something truly new to Sydney’s cultural and culinary culture.
From coffee to cocktails, this is more than a hotel bar. It’s four new reasons to head to Paddington.
