
A new destination has just opened in Fortitude Valley, bringing with it a dose of summer. Above Rooftop Pool & Bar crowns Ovolo The Valley with a Mediterranean-inspired terrace, pool and bar.
Designed by BSPN Architects, the rooftop blends tiled textures, greenery, and airy tones, channelling coastal charm. Every detail has been considered to create an atmosphere that’s aesthetic, elevated, and relaxed.
Behind the bar, Jake Down – founder of Distild, leads the drinks program with the same creative flair that earned him the title of World Class Australia Champion. His cocktail list is vibrant and expressive, weaving together ingredients like pistachio, saffron, rose, lemon myrtle, and desert lime into drinks that feel both familiar and fresh.
Cocktails like their signature ‘Mirage’ include Belvedere Vodka, passionfruit, rose water, and desert lime soda – showcasing light, layered, yet complex flavours.
At the helm of the menu is consulting chef Justin North, known for his refined yet approachable style, alongside Head Chef Kya Knights, whose flair for flavour and reflect Brisbane’s easy-going hospitality.
Together, the duo have built a menu that’s all about sharing, and simplicity. Think stone-baked pita brushed with linseed and garlic oil, old-school hummus topped with crunchy chilli oil, beetroot and bourghal spread, and kingfish ceviche with avocado and pickled cucumber. Each dish bringing together bright Mediterranean flavours with a modern Australian twist.
Above Rooftop Pool & Bar is set to elevate Brisbane’s bar scene – one cocktail at a time, and is open now from Wednesday – Thursday (3pm–8pm), Friday – Saturday (1pm–late), and Sunday (1pm–7pm).
