
Table For – Accor’s newly formed in-house Food and beverage collective, is teaming up with The Maybe Group to open its first venues this November. Together, they’ll launch Bar Allora and El Vista, and Flaminia – three distinct concepts set to shake up what people expect from hotel bars and restaurants.
Opening in mid-November on Bond Street, Bar Allora brings the energy of Milan’s fast-paced bar life into Sydney’s CBD. Presenting as a modern Italian all-day bar and restaurant built around flavour and style. Guests can pull up for an espresso, a Negroni, or a long lunch that flows into aperitivo hour.
Led by Chef Rosy Scatigna and Head Chef Josh Donachie (Jane, Jackson’s on George, RE), the menu celebrates Milan’s post-war dining culture and the southern Italian influences that defined it – bold, flavour-forward dishes that feel both nostalgic and new. Cocktails nod to 1980s Italy, think timeless classics with just the right amount of modern rebellion.
The space channels Italian Futurism – neon-lit, and energetic. “Exactly ten years after opening Maybe Frank, we wanted to bring back a 100% Italian experience,” said Vince Lombardo, Co-Founder and Director of The Maybe Group. “Bar Allora is about energy, culture and connection. Celebrating authentic Italian flavours with a joyful, modern twist. We?ve designed every detail to make it feel vibrant, welcoming, and unmistakably Italian.”
Then, late November, El Vista arrives inside Pullman Quay Grand Circular Quay, the site formerly known as Hacienda – reimagined as a Latin-inspired escape.
The Maybe Sammy team has built a drinks list that dances between iconic Latin classics and bold new signatures – from Palomas to balanced Margaritas to smoky mezcal Old Fashioneds and chilli-laced tequila spritzes. In the kitchen, Giovanni Pilu brings bright, coastal energy to dishes made for sharing – aguachile de seriola, crispy tuna tacos, golden empanadas, and crab tortitas that practically demand a second round of cocktails.
“With El Vista, we wanted to create a bar that feels like stepping into another world,” says The Maybe Group’s Stefano Catino. “It’s about energy, elegance, and storytelling – every drink, every song, every moment has rhythm.”
From lazy afternoon jazz sessions to late-night disco and weekend brunches that stretch into Latin nights, El Vista promises to be the city’s new spot for escapism – where Sydney meets Acapulco and nobody’s watching the clock.
Early December sees Flaminia join the lineup – a harbourside Italian restaurant from Giovanni Pilu and Marilyn Annecchini, located above the water at Circular Quay. Together, Bar Allora, El Vista, and Flaminia signal a new era for hotel dining in Australia.
