We Three, a neighbourhood bar on Marrickville’s Illawarra Road, is run by the mother-daughter duo Catherine and Ali Gibson Roy. Housed in a former bubble tea shop, it brings together good wine and Mediterranean-inspired plates in a setting full of heritage charm.
Dan Dan is the brainchild of the duo behind Sydney CBD’s beloved sandwich and cocktail bar Tiny’s, bringing their signature quirky charm and culinary flair to Pyrmont.
Taking a bit of inspiration from London’s top martini bars, with a laid-back Spanish vibe, Grant Collins from Gin Lane has put together a mix of experimental and classic drinks.
Launching in early August and open every day, Arms Length is taking over the well-known late-night spot, Dean’s Lounge with the energetic sister duo, Rebecca O’Shea (formerly with Rockpool Dining Group) and Rosie O’Shea at the helm.
“Papi Katsu is like nothing we’ve done before. We’ve all been in the industry for years, and now we just want to have a bit of fun,” says Tua. “The cheeky name, incredible menu, cyberpunk vibes, and top-notch service… we’re creating a spot where it’s all about enjoying yourself, no matter the occasion.”
Nestled along Hervey Bay’s esplanade, Bar Soma is a little slice of cosmopolitan charm that’s been shaking things up since late 2022. Co-founded by Timo van Hest and Neil Yates, Soma is all about delivering a top-notch dining experience in a laid-back, intimate setting.
Located in the basement of the iconic Gaden House in Double Bay, Bobbie’s is a joint venture with the Perrys’ longtime mates, Linden Pride and Nathalie Hudson, known for their Dante bars in New York City and Los Angeles
“We were inspired by our favourite places around the world, like Barcelona and Tokyo, where unexpected flavours and top-quality ingredients come together in a relaxed yet electric atmosphere,” says Ross Purnell.
The intimate 40-seat space exudes Italian flair through its updated food and drink menus. Arlechin’s atmosphere is reminiscent of an old European wine cellar, featuring a central curved cork roof that enhances its subterranean charm.
With velvet curtains, marble counters, and chic Art Deco interiors accented by green, the bar’s signature absinthe cocktail served in a dazzling absinthe fountain sets the tone.
Located in the heart of the resort, the updated Pearls Bar is decked out in rich jewel tones and lush accents, inspired by its tropical surroundings. The new menu, featuring locally sourced produce, highlights the vibrant flavours of the region.
