The fine folk at Motel in Wellington have been making bitters for their own bar, then they started handing them around their friends’ bars, now they’re smuggling (OK, importing) them here, said bitterer Tom Egerton. “At the moment the range consists of Smoked Apricot, Lavender, Charred Cedar and Cherry, and Spiced Apple,” he said. “We also do special edition small-batch releases, the first being a chilli and roast capsicum one, with designs on a barrel-aged honey bitters in early 2013.”
