Three Negronis from Conte Sydney

From Raffaelle Lombardi and Victoria Hampshire’s latest venue, Conte Sydney, comes three of the 40 negroni options on its menu.

1. Refined Mistake

  • 20ml Martini Rubino
  • 20ml Campari
  • 20ml Ginjo Sake
  1. Top with Champagne Lallier Brut
  2. Stir the first three ingredients with ice for 15 seconds
  3. Strain into a balloon glass with fresh ice, top with champagne
  4. Garnish with lemon zest and edible flower

 

2. Clarence St

  • 30ml Glenfiddich 12 Years Old
  • 30ml Marsala Superiore Secco
  • 30ml Bordiga bitter
  1. Stir with ice for 15 seconds and strain into a Coupette glass
  2. Garnish with orange zest

 

3. Beetroot Negroni

  • 30ml Monkey 47 Gin
  • 30ml beetroot-infused Campari
  • 30ml Carpano Antica Formula
  1. Stir with ice for 15 seconds and strain into an old fashioned glass with ice
  2. Garnish with fresh beetroot and lemon zest
