
South Yarra rooftop bar – Beverly, is leaning into the city’s after-work crowd with a new weekday activation – Golden Hour, running from 4pm to 6pm, Monday to Friday, between 16 March and 30 June.
The limited-time offering centres on a series of $30 food and drink pairings created by Head Chef David Ball and Bar Manager Rico Deang, designed to deliver quick, polished combinations suited to the early evening window. Alongside the pairings, the bar will also offer a rotating selection of $10 wine, beer and spirits throughout the promotion.
The activation focuses on a handful of signature bites matched with classic-leaning serves. A trio of oysters is paired with a mini martini, while a southern fried lobster roll lands alongside a spritz. There’s also a Wagyu slider served with a pint of beer, and a Bluefin tuna tostada matched with a margarita – a mix of seafood, snack-style plates and drinks designed to move easily between bar and table.
Outside the Golden Hour pairings, Beverly’s broader cocktail list continues to span both house signatures and classic builds. Among the signatures, Yes Please Jimador mixes Don Julio Blanco tequila with Thai basil, kaffir lime leaf, habanero and passionfruit, while Autumn in Karuizawa leans into Japanese influence with Roku gin, raspberry and rosewater finished with aquafaba for texture. The sparkling Midnight Shift brings together Aviation gin, blueberry tea, cloudy apple juice and prosecco, while Puerto Azul combines blue-pea infused rum with pandan, coconut and pineapple.
Spirit-forward options feature across the menu as well. A Barrel Aged Negroni blends Tanqueray gin, Campari and Antico Rosso vermouth, while the Grape Divine riffs on the classic bitter format with Scapa single malt, Luxardo Bitter and Punt e Mes, finished with a hint of Ardbeg smoke.
Classics are also well represented, from a Fig Old Fashioned built on Bulleit Rye and Turkish fig to the tequila-based Paloma and a smoky whisky-driven Penicillin combining Japanese whisky with Lagavulin and ginger liqueur. For those leaning celebratory, the elevated section includes a Gin + Champagne serve pairing Ukiyo Japanese Blossom gin with Perrier-Jouët Grand Brut.
Zero-proof options round out the menu, including Not So Pornstar, a Lyre’s-based take on the passionfruit favourite, and Very Blueberry, combining non-alcoholic gin, blueberry tea and sparkling wine.
Running through to the end of June, Golden Hour positions Beverly Rooftop as a weekday stop for early evening drinks, pairing quick-fire food and cocktails with skyline views just as the city clocks off.
