Watsons Bay Hotel unveils multimillion transformation this month

Watsons Bay Hotel will reopen its fully renovated top and mid decks on 29 October, marking one of the biggest upgrades in its 190-year history. The redesign, led by Laundy Hotels’ Danielle and Shane Richardson with Etic Design, introduces coastal-inspired event spaces.

The Top Deck now features wrap-around bifold windows, a new dry bar overlooking the harbour, and improved access for events, while the Mid Deck has been reimagined with new decking, banquette seating, and coastal tones. The Sunset Room & Bar has also had a full refresh with updated flooring, bathrooms, and lighting.

“We wanted spaces that people don’t want to leave,” says Emilie Delalande of Etic Design.

The fit out isn’t the only focus, alongside the venue transformation comes a new signature cocktail menu, with an extensive wine list and beers on tap.

Signatures include Berry Spice featuring white rum, Rhubi, raspberry, lemon, chilli, and grapefruit; The Peach Garden with gin, St Germain, apple, lime, peach, and mint; Sun Rum Punch with white rum, passionfruit liqueur, mango, pineapple, and lime; and Firemelon with Fireball, watermelon liqueur, apple, cranberry, lime, and orange.

Classics feature Margaritas, Espresso Martinis, and Amaretto Sours, while the spritz line-up includes Spritz Rosa, Elderflower Spritz and Lush Spritz, plus non-alc options like the Amalfi Spritz and Amber Whisper.

Head Chef Damian Heads launches a new summer menu featuring fresh seafood, grills, and pub classics, designed to pair well with selected wines and cocktails.

This summer also sees the debut of Club Amalfi, transforming the Top Deck once a month into a Mediterranean-inspired beach club with shared plates, magnums of wine, and harbour views. The Top Deck, Mid Deck and Sunset Room & Bar reopen in late October, with the Beach Club, Front Bar, and boutique accommodation trading as usual.
