
Bar Tilda has rolled out a new collaboration with Melbourne bartender Darren Leaney of Caretaker’s Cottage – a limited-edition trio built around Australian dessert nostalgia.
The lineup includes: The Lamington featuring vodka, gospel rye, chocolate ganache, walnut, cake butter, coffee, coconut, banana, and lemon, the Pavlova which showcases, four pillars yuzu gin, marionette elderflower liqueur, mango, passionfruit, yuzu, and coconut water, and finally the Peach Melba blending marionette peach liqueur, four pillars modern australian gin, peach, raspberry, coconut water, vanilla, and lemon. All three are milk washed, clarified and finished with a dessert-style garnish like meringue, raspberry, or ganache.
Leaney, best known for putting the clarified milk punch back in the spotlight with his tiramisu version, keeps the focus here on late-night drinking. The specials sit alongside Bar Tilda’s usual menu but take centre stage after dark – and they’re also popping up in the Nightcap Club, the bar’s 9.30pm ritual where guests score a free mini dessert cocktail, Monday to Friday.
Swing by on a Thursday or Friday from 4pm and you’ll catch a live DJ setting the tone for an evening in Bar Tilda.
