
Pullman Hotels is rolling out a new menu takeover across its bar venues from mid-February through to October, partnering with chef Nat Thaipun, with the first activation launching in Sydney this month.
The collaboration opens at Acapulco El Vista at Pullman Quay Grand, where Thaipun has worked alongside the team from Maybe Sammy to develop a limited-time cocktail pairing created specifically for El Vista’s bar setting and evening service.
The cocktail list is designed to move with the rhythm of the venue, built to sit alongside the snack-led menu, and paced for long, social sessions. The five-drink lineup includes Jalapeno & Sesame, Coconut & Finger Lime, Almond & Lemon, Hibiscus & Vanilla, and a Thai Dirty Martini, positioned as bold, savoury, and citrus-driven serves tailored to bar drinking rather than full dining.
The cocktail collaboration launches alongside Thaipun’s bar menu at Acapulco El Vista before rolling out across participating Pullman hotels in Australia, New Zealand, and Asia, with menus adapted to suit each venue.
“For me, this menu is about sharing stories as much as sharing food,” said Nat Thaipun. “Hotel bars are social spaces, and I wanted the dishes to reflect that, food that’s rooted in my Thai heritage but feels relaxed, generous and easy to enjoy in the moment.”
The Sydney launch runs across 21 Saturday and 22 Sunday this month, with Thaipun appearing in person. Cocktails across both days are curated by the Maybe Sammy team, with Saturday from 4pm programmed for late-night trade and Sunday from 12pm shifting to a daytime service with the same menu.
