
Brisbane’s The Summit restaurant has reopened at Mt Coot-tha, following a multimillion-dollar transformation by the Mantle Group. The historic site has been reimagined into a dining and drinking destination, spearheaded by Godfrey Mantle, Mantle Group founder.
With sweeping views across the city and out to Moreton Bay, the venue now offers a refined restaurant, vibrant outdoor verandah, and a sleek, design-led bar.
The kitchen is under the direction of award-winning chef Kym Machin and has a focus on modern Australian cuisine. The menu embraces a sustainability, with locally sourced produce, including Elliott Heads spanner crab, Daintree barramundi and Longreach organic lamb. Ingredients grown on-site in The Summit’s edible gardens and beehives are also featured on the menu.
The wine list leans heavily into small producers, including standouts from the Granite Belt and the Adelaide Hills. Local distilleries feature prominently across the spirits list, while the cocktail menu plays with native flavours, bringing forward an inventive selection.
“There’s a lot of pride in what Queensland has to offer, and we wanted to reflect that in every part of the experience – including the glassware,” said Mantle.
The bar also serves a rotating tap list featuring independent brewers from across Australia, alongside Mantle Group’s signature beer range, brewed to pair with the Queensland climate and the restaurant’s share plates menu.
“The Summit is one of the most unique dining sites in the country; beautiful by day and absolutely spectacular at night,” said Mantle.
Designed by Brisbane architects Hogg & Lamb, the venue balances heritage charm with contemporary finishes – polished timber, open-air spaces, and panoramic glass that puts the view at centre stage.
The relaunch marks the first step in a broader revitalisation plan for the Mt Coot-tha precinct, with Mantle Group already working on additional concepts, including a boutique gin distillery and cultural tourism experiences – in the lead-up to the 2032 Olympic Games.
