
High above Bondi Beach, industry leaders gathered at Icebergs Dining Room and Bar during Sydney Bar Week for an afternoon that celebrated the art and heritage of prestige tequila. Hosted by Loy Catada, Matty Opai and Alex Prichard – an experience that redefined what it means to taste tequila.
Guided by Loy Catada, Proximo’s national brand ambassador, guests experienced a curated dining journey showcasing the complexity of the 1800 Tequila range – from Blanco to the world’s best, 1800 Milenio Extra Añejo.
Against sweeping ocean views, the evening began with a Mexican 75 – 1800 Blanco lifted with lemon, agave, and fizz – paired with seaweed cannoli and beef tartare. The Rosita, made with 1800 Cristalino, Campari and vermouths, accompanied Southern Bluefin tuna crudo, while the 6th Borough, built on 1800 Añejo, brought depth alongside fragrant herbs and chinotto.
The centrepiece of the evening, 1800 Milenio Extra Añejo, was served neat with Westholme Wagyu Bavette and stone fruit–glazed short rib, a pairing that highlighted the tequila’s refined vanilla, oak, and apple notes. The dinner closed with a Tres Leches Cake with Davidson Plum and Mango, served with the rare 1800 Guachimonton – a finale that reflected the balance of heritage and innovation driving modern tequila.
In a room filled with some of Australia’s most respected bartenders, the afternoon was both a showcase of flavour and a reminder of the growing appreciation for tequila as a prestige spirit – one defined by provenance, craftsmanship, and storytelling.
