Two Christmas Cocktails

 This festive season, Sydney’s Apollonia has two drinks on the menu to help soften even the toughest bah-humbug customer, one bold and spiced, the other indulgently rich, capturing the essence of Christmas.

Ingredients:

45ml Scotch whisky

15ml mulled wine reduction

25ml fresh lemon juice

Poached pear foam

Method:

Shake all ingredients with ice

Strain into an old fashioned glass

Pour over foam

Garnish with Peychaud Bitters

Panettone Negroni


Ingredients:

26ml Gin

26ml Campari

26ml dry red vermouth

2.5ml cherry liqueur

2.5ml champagne vinegar solution

2.5ml pomegranate molasses

1 drop vanilla extract

Infused, fat washed gin (10g unsalted butter and 5g toasted sourdough)

Method:

Batch for 90ml pour

Stir with ice and pour into old fashioned glass

Garnish with orange peel
