Three Rum Cocktails from Old Loves

Born in the sun-soaked Caribbean, rum has long held its place as a cornerstone of global drinking culture – and for good reason. Unlike many other spirits, rum offers a naturally sweet, full-bodied flavour profile, thanks to the unique compounds developed during its fermentation and distillation process.

Versatile and complex, rum is equally at home in a crafted cocktail or sipped neat. At Old Loves, Sydney’s underground rum bar, we invite you to experience this timeless spirit through three signature rum cocktails – each one a tribute to its tropical roots and bold character.

Haymaker

  • 45ml white rum
  • 5ml lemon juice
  • Sorrel soda
  1. Pour the rum and lemon juice into a highball glass
  2. Top with soda
  3. Garnish with lemon wheel and a fern frond

West Side Rumos

  • 60ml Rumos Spirit Batch
  • 30ml lemon juice
  • 30ml vanilla cream
  • 15ml simple syrup
  • Egg white
  • West Coast Cooler (top)
  1. Add all ingredients (sans West Coast Cooler) into milkshake maker with ½ scoop of crushed ice and blitz for 30 seconds
  2. Rest in freezer and top with West Coast Cooler

Pet Dragon

  • 50ml Old Loves Rumbuie
  • 20ml lemon juice
  • 15ml Li Hing Mui Syrup
  • 15ml egg whites
  1. Add all ingredients to cocktail shaker and shake vigorously until tins are frosted over
  2. Double strain into Nick and Nora glass
  3. Garnish with Micro Shiso sprig
