Bar Tilda has launched a new cocktail menu, delivering a tightly structured, cocktail-led drinks program built around classics, signatures and an ongoing focus on Australian whisky.

The cocktail list sits at the core, with a $25 price point across signatures and classics. The Tilda Cocktails section leans into fruit-forward and modern builds, including the Bianca Tropical Martini with vodka, coconut, passionfruit and vanilla, and the Sina Southside from Japan combining gin, mint, lime and sencha tea. The Joanna Mango Rum Fizz brings rum, Montenegro and mango into a lighter, carbonated style, while the Elizabeth Spicy Paloma layers mezcal and tequila with grapefruit, cardamom and spicy agave. Richer profiles round out the list, from the Flick Saffron Gold Rush with bourbon, honey saffron and candied ginger to the Betty New York Sour, finished with shiraz.

Classic cocktails are broken out into their own sections, covering Martinis, Negronis, Manhattans and Old Fashioneds. Each category includes a house version alongside variations, including the Vegemite Vesper under the Martini list, a Mezcal Negroni, and a Banana Old Fashioned. The format keeps the structure familiar while offering alternative flavour profiles across each style.

A dedicated Australian Whiskey Embassy sits within the program, rotating monthly distillery features through a single cocktail. The current serve, The Velvet Old Fashioned, uses Cape Byron whisky with macadamia and chocolate, positioning local whisky as a key part of the offering.

Non-alcoholic cocktails are included through a mocktail list built on Lyre’s spirits, with alcohol-free versions of a Negroni, Aperol Spritz, Mojito and Amaretto Sour. At the premium end, a small vintage cocktail selection offers higher-priced serves using older spirits.

The wider drinks list extends to beer, cider and wine, but the focus remains on cocktails, with the menu structured to cover signature builds, classic formats and rotating whisky features within a single program.
