Melbourne’s Bar Clara reworks signature cocktails for new winter menu

Hidden beneath Melbourne’s Chinatown, cocktail bar Bar Clara has launched its new Autumn/Winter 2026 menu, a nostalgic “Greatest Hits: Remix” concept revisiting some of the venue’s most memorable cocktails from the past seven years.

The new menu reworks crowd favourites through updated techniques, ingredients, and flavour profiles, with each cocktail paired to a song that inspired the drink. Guests can even listen along via an old-school MP3 player stationed at the bar, leaning into the music-led concept throughout the experience.

Bar Clara described the menu as “a conversation with the original,” taking drinks that “raised eyebrows, drew a smile on that first sip, and cemented themselves in our memory” and rebuilding them for 2026.

Leading the lineup is the Banoffee Special, the venue’s long-running signature cocktail made with banana-infused whisky, dark banana skin oleo, lemon juice and toasted meringue, paired with whiskey. Elsewhere, Kiwi Cloud mixes a house-made kiwi tequila liqueur with lemon, cardamom tincture and a vapour bubble garnish, while Good Mimes combines mint-infused sloe gin, apricot, vanilla and honey syrup with carbonation and an edible butterfly garnish.

The remix approach continues across the menu, with cocktails like Pineapple Express inspired by tropical nights in Sentosa Island, Fire & Earth revisiting one of the bar’s original drinks with beetroot syrup and sherry, and Major Tom delivering a bittersweet mix of gin, crème de mûre and bitter lime syrup served over crushed ice.

Nostalgia also runs heavily through the dessert-style drinks, particularly Only Crunchy, featuring Coco Pops-infused vodka, coffee liqueur, amaretto and an LCM garnish, and Cereal Killer, a whisky cocktail built with Nutri-Grain-infused double grain whisky, coconut fat-washed malt extract, and an Anzac biscuit garnish.

The venue’s cult-favourite mulled wine, Mull It Over, also returns for winter after first launching during Melbourne’s lockdown delivery era. This year’s version comes with an optional sea salt dark chocolate pairing designed to deepen the spice profile of the drink.

Alongside the cocktails, the menu includes Victorian craft beers, Australian wines, and custom mocktails, continuing the intimate late-night atmosphere Bar Clara has become known for since opening in 2019.
