New two-level rooftop bar opens above historic Clarence Street building

A new two-level rooftop venue has opened above Clarence Street in Sydney’s CBD, with Sora Rooftop & Sky Lounge launching on top of the heritage-listed Nelson House at 285 Clarence Street.

Spanning two levels and accommodating around 120 guests, the venue combines an open-air cocktail terrace with an upstairs Sky Lounge overlooking the city skyline. The rooftop sits atop Nelson House, a warehouse-style building constructed in 1910–1911 during Sydney’s commercial boom and now part of the precinct’s historic streetscape.

Sora is the latest venture from hospitality operator Ronny Dubé. Drawing on Dubé’s nightlife background, the venue is designed to transition from sunset drinks into a late-night destination, with DJs set to feature on weekends.

The drinks program is cocktail-led, supported by a wine list showcasing Australian producers and a premium spirits selection.

The cocktail list features a mix of classic-inspired serves and house creations, including the signature Martini in the Sky with Grey Goose, pomegranate, lemon and mint, and the Apocalypse Negroni, a twist on the Italian classic with Campari, gin, red vermouth, lemon and egg white. Other highlights include the tropical Nui Nui with dark and spiced rum, pineapple and orgeat, Once Upon a Time in Mexico with spicy tequila, cucumber and agave, and Cloud Nine Colada, blending yuzu gin with pineapple and coconut.

Leading the kitchen is Head Chef Pablo Poblete, whose career includes roles at Pendolino, Icebergs Dining Room & Bar, Intermezzo and several five-star hotels. The menu focuses on share-style dishes influenced by modern Australian and Mediterranean flavours.
