The concept of bringing the magic of the 1950s-style ‘hotel’ bar experience from Maybe Sammy into a premium hotel is something Catino and the team have been wanting to do for a while.
Eleven Bridges, South Brisbane’s own gin bar and distillery, ready and waiting for you to sample their Brisbane-inspired drops. The brainchild of Lyal Midgley, Rugby League legend Darren Lockyer and Mark Nightingale, Eleven Bridges Gin Bar and Distillery makes its home in the former Peel Street Tavern.
The building was a dental surgery and hadn’t been used in 15 years. The idea to convert it to the cantina and cocktail bar was the perfect fit. “It’s tiny and we love it like that,” says Mark.
So, it’s nice to be able to report that the highly anticipated basement bar, Apollonia, is now open with Alissa Gabriel (of Mjolner and Kiss Kiss Bang Bang fame) in charge of the drinks and Alex Thorn in the role of Head Bartender.

Joining Whiley behind the bar are some of the city’s best bartenders, including Evan Stroeve (Bulletin Place), Jake Downe (This Must Be The Place; Scout London) and Ho Song (Cantina OK; PS40). Apart from the exceptional level of service they will bring, the crew have creative license to work on the “Re- search” drinks…

LOC, which stands for ‘left of centre’, features a curated list of more than 170 natural, minimal intervention and lo-fi wines that people can enjoy with snacks from Maria in the small space or outside.
“We smash out a heap of cocktails from sweet to the classic,” says Clint Hyndman. “Most importantly there’s plenty of bar banter soundtracked by rocking tracks from the 60’s & 70’s. We’re all about a good time!”
The hype is real. Sammy Junior, the espresso and cocktail bar sibling of Maybe Sammy, opens today (despite the weather) on the ground level of 66 King Street in the Sydney CBD.
This modern incarnation of Hooch is a whiskey bar set in a dark, discreet shack channeling vibes from the deep south, during the prohibition era. Inside, you will find all American Whiskey with a hint of Irish
