You had us at “Swine”. This new bar and restaurant takes over the former site of the Bavarian Beer Café on O’Connell Street in Sydney, in the heart of the CBD. Owned by the Urban Purveyor Group (who, as we flagged in our February issue, are also slated to open a new bar on York Street this year), the food side of things here definitely has a porcine inclination. They’ve got a deli for those who want to get in and get out, including dishes like suckling pig croquettes — a dish that sounds like both tasty drinking eats and our idea of what fast food should be.

The potables list is also of a porky persuasion, whether it is through the drink names (Butchers Negroni anyone?) or as an ingredient itself (see the Swine Smash — it mixes up Havana Club with mint, pineapple, and pancetta).

The bar is being run by Led Emmet, formerly of Firefly and Lotus Dumpling Bar.
